Had a Pizza Burger a ‘la Cooking with Trader Joe’s: Skinny Dish. So far, book has a lot of stuff I want to make, but I’m glad I have cooking experience because I do believe the instructions could be clearer. Despite this, burger came together well and was absolutely delicious. Topped it with a slice of Galaxy Vegan Mozzarella flavor which I do not think melted well and will stick with Daiya in future incarnations and some extra sauce from what I used in the burger. Yum!
I also randomly purchased some delicata squash in my winter squash tour 2011 series. Fortunately, Isa had a recipe for me from Appetite for Reduction. Quick and delicious… but the only change is that I cut it into rings, which was burger appropriate I think.
The Husband and FiL* approved! Also me approved, would make again… especially since it involves squash and pizza!
