Didn’t feel like cookin’, so while the husband grilled corn and various vegan meats, I made the Happy Herbivore Strawberry & Spinach Salad. Swapped out some of the Strawberries for Blackberries, and since the grill was going, I roasted a few chickpeas for the top.
