Ah dinner. It’s one of my three favorite meals of the day.
Tuesday was my wedding anniversary, did you know that? 8 years of marital bliss with The Husband. I thought it deserving of a vegan version of Zucchini Pie that we used to enjoy back in our non-vegan days (the link is a close approximation to the old recipe we used), but used The Vegg instead of egg and tofu instead of most other things… and also, no Bisquick. A valiant first attempt, though I may need to adjust tofu/flour ratios accordingly. It tasted fabulous. A side of “ribs”, courtesy of Happy Herbivore 2012 calendar, and some steamed broccoli. And entirely too much wine!
Wednesday saw the return of Starch Solution Potato Enchiladas (with Black Beans, topped with Viva Vegan Green Tomatillo Sauce). Side salad to go with. I will most certainly make these again.
Tonight I dined on leftover Zucchini pie with a side of baked sweet potato (Asian, fabulous) and roasted broccoli, which now I have to say I like better than steamed.
Last picture represents snackage… there hasn’t been very much, though tonight I’m torn between another spinach pie, ice cream, banana or nothing (it should be the latter, because if my tastes are that varied I don’t need to be a-snackin’). Recently (and hopefully not to my detriment) I found that a local gelato place, DeLuca Gelato, actually has vegan sorbettos! So I try to forget that I know this, but for our anniversary we decided to go get an ice cream treat. I had chocolate and banana, and he had mango and kiwi. I do nothing in life to deserve these things (have fun ice cream treat, being married to a fabulous man), but I do enjoy the heck out of them!
