Bread and All The Flours
I really don’t need bread in my life… but it does not stop me from perusing it relentlessly!
Yesterday I tried to make this bread. I was giddy and excited as the process unfolded in front of me, and I was anticipating an epic bread and the answer to all of my “While I love Ezekiel bread to bits, I’d love to have a no-oil added whole wheat vegan alternative bread” problems!
… that is, until I baked it.
Taste was absolutely spot on. Texture, utter failure.
In the past, this would mean that I would cease all bread making activity for… oh, say, 5-7 years and then tentatively try again. Yet this time, I knew I would re-try in 24-48 hours because after 37 years on the planet I’m finally realizing that not all flours are created equal.
Every failure I’ve had was due to using the wrong flour. Every. Single. Time.
So I thought, I researched, and re-read the recipe 80 more times. Realized that I used the wrong flour. Sure, I used a wheat flour. Just not the kind the recipe is calling for.
Whipped up a batch today and am trying again.
The progress of this loaf doesn’t look as fantabulous as yesterday’s… but considering yesterday’s wound up being a total flop, I’m hoping this means it’ll be totally awesome.
