Carrot Ginger Tofu Soup a’la Vitamix

Did not expect to see that box under the tree, and kind of freaked out when I did.  Finally!  I can have a Green Monster Smoothie without bits of kale stuck in my teeth?  

And it came with 1 million recipes.  Not all vegan (or even vegetarian of course) but I devoured the book mightely.

Served with an french dinner roll, apple slices and pomegranate garnish.  Not the most attractive meal nor photography… but very heavenly tasting.

Then I saw the soup destined to be the first soup in a long line of Vitamix soups.  The recipe serves four, but it was Christmas and The Husband and I were being greedy-guts that day.  So what if my little rice sculpture drowned in a pool of delicious, pipping hot gingery carrot soup that was so smooth and creamy?  

Lucky rice, I was cold!  

… Well, until I ate the delicious soup.
