Homemade corn tortillas with the breakfast scramble (tofu, potato, peppers of hot and sweet, onion). Much better than store purchased! I must test this recipe a few more times but I think I have my perfect corn cake at last… somewhere between johnnycake and a pancake. Very delicious, but nothing new.
Breakfast - Oatmeal of banana, apple and blueberries, and a cup of joe black. Settled down for a fine morning of breakfast and Game of Thro- damn. Cersei chapter.
Lunch - Leftover Raw Corn and Black Bean Salad, without the avocado and without the plantain. Why? Spinach pie, that’s why! I am still striving for a salad a day, thanks to the Great Salad Challenge. I think it really helps with hunger.
Dinner - CSA gave us a 1/2 pound of okra. What’s a gal to do? Sliced it up with some pepper and onion, made a paste (the Bharvan Bhindi paste to be exact from a recipe I made from Vahrehvah some time back that was heavenly), mixed the veg and paste together and bung them into a pre-heated cast-iron skillet, topped with chopped tomato and baked in a 400 degree oven for 30 minutes, stirring halfway through. Stirred in some fresh chopped cilantro and broiled for another 4 minutes. Served it with rice and the flat bread we use as our lazy wheat roti substitute. So freaking amazingly good. Too bad no leftovers!
Unpictured Snackage - Grapes, per usual. I had some TJ’s reduced guilt pita chips and zero fat hummus from Oasis Mediterranean Cuisine (I know I can make my own, but this is so already made and packaged and I am so lazy and the what not). I may have a banana or ice cream tonight (looking towards the former if anything since I already had the latter last night).
Final notes - I miss dinner!

The short story: I feel very sick. I drank a lot of tea. I ate a lot of spinach pie. Likely because of my obsession with triangular food (spinach fatayers, tortilla chips, vegan Doritos and pizza, and other childhood friends).
Breakfast - I remember liking butternut squash oatmeal, so I tried sweet potato oatmeal today. It wasn’t bad. It wasn’t great, I probably wouldn’t go out of my way to make it again… except it was super filling.
Lunch - I made Ancho Lime Pinto beans the other day. These are the leftovers with some diced baked sweet potato (okay, so maybe a sweet potato day as well, I’m sick), and spinach pie. Super filling.
Dinner - I made a FatFree Vegan Kitchen recipe, Raw Corn and Black Bean Salad with Avocado. Subbed grilled plantains for the avocado. Side of… well, if you are looking at the pictures, you see it there.
Unpictured Snackage - A few grapes before my run, I needed them. A banana. And the fourth “I’m grumpy and hungry and my throat hurts wah” spinach pie. Need to stop the woe-is-me-I’m-sick eating, but at least it’s not jars of peanut butter. Not too long ago, it totally was.
In conclusion - I would eat another spinach pie, but the stomach has barred the gates to all except tea and water. Summer cold is coming…

I like to photo journal my food. Big whoop.
Breakfast - Breakfast scramble made with The Vegg (I’ve had it several times, still undecided on it…), it has tofu and yellow squash and onion and pepper and spinach and all the yummies. Side of pita, half an apple with a little Penzey Chinese Cinnamon sprinkle, and (you guessed it) a cup of Joe Black. I also like to splash a bit of hot sauce (Scoville Garlic Cayenne is my poison of choice), and a little sprinkle of Happy Herbivore Facon Bits.
Lunch - I approached it a bit hungry this morning, but the same breakfast can be super filling some days and not on others, so I’ve given up on trying to figure out the rhyme or reason. Requisite spinach pie with a baked sweet potato topped with a bit unusual, urad dal cooked and then a little BBQ sauce stirred in. Quite tasty. Also doing the E2 Salad Challenge, though big it was rather simple with romaine, grapes, sunflower seeds, broccoli slaw and balsamic vinegar. Here’s the rub… normally I’d put away the plate of food, but the intro of the salad had me forgo consuming the second spinach pie then and there. I saved it for after work.
Dinner - Feast! Grilled corn, courtesy of the CSA (spun with some lemon, chipotle powder and garlic powder because a) how I like it and b) the corn did not turn out to taste so good this time), Chickpea Salsa Wraps, courtesy of The Happy Herbivore… and another spinach pie because I had one and I could not help myself! :) Very filling and delicious.
Unpictured Snackage - The second spinach pie I didn’t have at lunch, and a couple more grapes for great grape flavor. I maybe will go for the cherry amaretto tonight, but I also entertain the notion that I’ll grill some nectarines or bananas… entertain the notion I’ll go outside again. But there is at least most of my day. Note - I did it since it was in my “budget”, the ice cream and a half a grilled nectarine. Incredible!
