Maybe a stressful day, but the meals were good.
Breakfast - What is fast becoming a household usual, breakfast potatoes with peppers and onions. A strawberry-kiwi cup and… a bit of unusual, a slice of toast with hummus and fat free cherry salsa. It was okay. Not great. I remembered a cherry salsa we got apple picking last year, and that was very sweet. This was not, but it was not inedible. So I ate it!
Lunch - Spinach Pie &! Today’s salad featured more of the cherry salsa, corn and some roasted black chickpeas (this time simply with salt). Did you know that black chickpeas roast well, but look burned before you even start? Trust me, they taste great roasted up with salt.
Dinner - Leftover beans and greens, courtesy of Post Punk Kitchen/Appetite for Reduction. Did you know I used to hate collard greens and black eyed peas and non-fried-white-rice a lot? It shocks me still the things I love and crave, and how different they are from when I was a child, or even 5 years ago. PS - HOT SAUCE!!!
Unpictured Snackage - A few grapes, a little water melon, and a small bowl of cereal.
Final Thoughts - Homemade Peach Salsa. But not until tomorrow.

I feel streets behind.
Breakfast - A typical B’klyn<3 breakfast of oatmeal with apple, banana and berries. Went steel cut on this one. As always, delicious.
Lunch - Another fast favorite, spinach pie and salad. Today’s featured grapes and leftover black chickpeas (kala chana!) from what you’ll see was dinner. I roasted them with sriracha, which turned out to be an excellent idea. A little balsamic to finish.
Dinner - I’ve been wanting to make FatFree Vegan Kitchen’s Curried Rice Salad with Black Chickpeas and Mangos for a couple of weeks now. Now I have! Now, I know she and the family were disappointed with the black chickpeas. I was too when I first used them. When I saw this recipe I thought, “This is how I will enjoy them.” And I was totally right, the salad is amazing! Served it over some spinach (saag) because this is how I roll.
Unpictured snackage - Day was pretty light, and I almost made it, but I did have a small bowl of cereal with banana to stave off hunger, and was still well within my caloric bank for the day. Despite wanting to stress eat all over the place, I did not, so I was friggin’ proud of me.

Friday Fun Food!
Breakfast - Big fat potato squash scramble. It was roasty and tasty and tasted fabulous smothered in ketchup. Enjoyed with a slice of toast topped with some broiled peaches.
Lunch - It is as I predicted; spinach pie with apple grape salad. Was a great lunch.
Dinner - The Husband went to 1000 stores just to get the missing can of blackeyed peas we needed to make Hottie Black Eyed Peas (we received collard greens from the CSA the previous day that looked like they were about to depart delicious life to wilted mess, and this was the first recipe to come to mind). Served it with rice and we both enjoyed the hell out of it.
Unpictured Snackage - Bad snackin’ day (not the items, I just tended to snack a lot), with pita chips and hummus, a couple of unsalted pretzels, a couple of corn chips, a small bowl of cereal, a banana, some dark chocolate, a spinach pie. Bad, because most of that I ate not because I was hungry, but bored. I recognize it, and I move on.

Lunches for the past 3 days (including today). Usually Lunch and Breakfast both tend to be boring. And I don’t have a problem with boring. It’s something I like, quick to cook, a pleasure to eat so why not almost every day.
So you see spinach pie and:
1 - A great big salad full of fruits and veggies
2 - Reduced spinach pie for vegan eggrolls and a small side-salad
3 - And again!
I can almost guarantee my Friday lunch will be remarkably similar to my Tuesday lunch. And delicious.

Very delicious, but nothing new.
Breakfast - Oatmeal of banana, apple and blueberries, and a cup of joe black. Settled down for a fine morning of breakfast and Game of Thro- damn. Cersei chapter.
Lunch - Leftover Raw Corn and Black Bean Salad, without the avocado and without the plantain. Why? Spinach pie, that’s why! I am still striving for a salad a day, thanks to the Great Salad Challenge. I think it really helps with hunger.
Dinner - CSA gave us a 1/2 pound of okra. What’s a gal to do? Sliced it up with some pepper and onion, made a paste (the Bharvan Bhindi paste to be exact from a recipe I made from Vahrehvah some time back that was heavenly), mixed the veg and paste together and bung them into a pre-heated cast-iron skillet, topped with chopped tomato and baked in a 400 degree oven for 30 minutes, stirring halfway through. Stirred in some fresh chopped cilantro and broiled for another 4 minutes. Served it with rice and the flat bread we use as our lazy wheat roti substitute. So freaking amazingly good. Too bad no leftovers!
Unpictured Snackage - Grapes, per usual. I had some TJ’s reduced guilt pita chips and zero fat hummus from Oasis Mediterranean Cuisine (I know I can make my own, but this is so already made and packaged and I am so lazy and the what not). I may have a banana or ice cream tonight (looking towards the former if anything since I already had the latter last night).
Final notes - I miss dinner!
